Chef Anton Edelmann

Anton Edelmann
Chef Patron Allium restaurant, London, United Kingdom.

Born in Germany, Edelmann worked at his uncle's hotel during the school holidays, where he discovered his passion for cooking soon after an apprenticeship at The Ulm Bundesbahn Hotel in Germany, Anton came to London and enjoyed a meteoric rise upwards through the echelons of the cooking world, taking in such illustrious establishments as Grosvenor House, The Dorchester, Portmann Inter-Continental, and The Savoy.

Soon after Anton Edelmann landed his first professional job at The Savoy, London where Anton had previously been employed as a commis saucier (apprentice sauce maker) some eleven years before, now returning back with a wealth of experience and knowledge to incorporate in to the Savoy kitchen in his new role as Maitre Chef des Cuisines running the famous River Restaurant, eight private dinning rooms and three banquet rooms.

Chef Anton’s cooking is modern international with English classics and a strong French influence. Here, a young Giorgio Locatelli was one of his protégés.

Now aged 50, Edelmann was responsible for the Savoy's menu for more than 20 years. He revolutionized Savoy cuisine with a style of cooking he describes as 'modern French with a generous sprinkling of English'. In 2003 Edelmann, who joined the Savoy in 1982 and is its longest serving maitre chef des cuisines, left the Savoy to take up the position as Principal Chef of Directors Table, the fine dining division of catering and support services company Sodexho. He is responsible for devising new menus for City directors and training the chefs who prepare them and he will also oversee and direct the fine dining restaurant at Allium, London's Dolphin Square Hotel restaurant, from 16 October 2003.
